I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Cheesy Breadsticks from Sourdough Discard

Experimenting with sourdough discard again and came up with these cheesy breadsticks.
Ingredients:
1 cup sourdough discard
3 tbsps olive oil
2 cups flour
2 tsps salt
2 tsps instant yeast
5-6 tbsps water (depends on how wet the discard is)
3/4 cup parmesan cheese

Mix flour, yeast and salt together in a large mixer bowl. Add starter and oil, then water enough for a dough ball to form. Then add the cheese.
Knead a few minutes then place in an oiled bowl and cover with a clean dish towel. Let rest 1-2 hours.
On a floured surface knead the dough 1-2 minutes then roll out to about 7 X 13". Cover with dishtowel for 10-15 minutes.
You can trim the edges of the dough to be more square. I used my scraps by braiding them into one breadstick. Next cut the rectangle into 12 strips, brush with olive oil and twist.
Place the twisted dough on lined baking sheets, spray with olive oil and sprinkle some sea salt.
Place a pan of water in the bottom of the oven and bake the breadsticks at 400°F for 15-20 minutes.
Next time I might try a garlic herb butter to brush on in place of the olive oil, but all in all pretty pleased with the way these turned out.
Makes 12

  1. I made this recipe...it was delicious and simple! One question--Did you make this recipe with fed or unfed sourdough discard?
