I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Honey and Lavender Shortbread Cookies

OMG aren't these cute?
And wait 'til you see the trick for making these flower shapes!

Ingredients:
1 cup butter, room temperature
1/2 cup sugar
3 tbsps honey
2 cups flour
pinch of salt (if your butter is unsalted)
2 tsps dried lavender (didn't have fresh this time so got mine at Bulk Barn)
purple food colouring optional

To begin cream together the butter, sugar and honey.
Add the flour and lavender. Add food colouring if using. I used some but just wanted a mauve cookie not outright purple. I didn't use quite enough...the dough was a nice mauve but once baked the colour didn't show much : (



When you have a well blended dough divide it in half and roll into logs about 1  1/4" in diameter. Roll each up in plastic wrap and freeze for 10-15 minutes. The original recipe called for 30 minutes in the freezer but I checked mine at 15 and it was quite hard.  I think 10 minutes would have been long enough.

Take the cookie logs out of the freezer, unwrap and cut into 1/4" slices. And here's the trick... take an apple slicer and press part way down to make the flower shape.  Cool eh?



Place the flower cookies on a parchment lined pan and pop the pan in the freezer for 10-15 minutes so you don't lose the detail.

Then take them right from the freezer to a 325 F oven for 15 minutes.



Makes 38-40 cookies
