I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Spinach and Feta Stuffed Potatoes

All the spanakopita flavours...



4 russet potatoes
1 tbsp olive oil
3 cups fresh chopped spinach
3/4 cup diced onion
3 cloves garlic, minced
1 tsp oregano
1/4 tsp salt
1/4 tsp lemon pepper
1/3 cup cream cheese
1 cup crumbled feta cheese, divided

Heat oil in a skillet and add onion and cook 2-4 minutes. Add spinach, garlic and oregano and cook an addition minute or two.

Bake potatoes your usual way and once cool enough to handle cut in half and scoop out, leaving about 1/4" of potato on the skin.

Mash the potatoes with cream cheese and the seasonings, then stir in the spinach mix and 1/2 cup feta. Fill the potato skins and top with remaining feta.



Place in a baking dish and bake in a 375F oven for 25-35 minutes.
