I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Crustless Veggie Quiche

This recipe makes 1 - deep 10" round or 1 - 9 X 13" quiche
Look at those lovely layers!



3 cups chopped spinach
1 cup finely shredded carrot
2 tbsps chopped sweet pepper
2 cloves garlic, minced
3 cups mushrooms, chopped
4-5 slices bacon, chopped
8 eggs
1 cup shredded mozzarella
1/2 cup plain Greek yogurt
1/3 cup parmesan cheese
1/2 cup 10% cream
1 tsp salt
1/4 tsp pepper
1 tsp onion powder
1/4 cup roasted sweet peppers, bought or homemade

Mix spinach, carrot, sweet pepper and garlic and place on the bottom of your greased baking dish. Sauté the bacon in a frying pan for a few minutes, then add the mushrooms. Toss a couple minutes more then layer on top of the spinach mix.

Combine the eggs, mozzarella, yogurt, parmesan, cream, salt, pepper and onion powder and ladle into the dish.

Top with some roasted sweet peppers.



Bake at 350 F for 45 - 50 minutes. A knife should come out clean from the center when done.

Perfect for breakfast, brunch or even a light supper
