I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Turkey Enchiladas

A meal you can prepare ahead of time and just pop in the oven when you need it.

6 - 6" tortillas
1/2 cup refried beans
2 cups cooked turkey (or chicken)
2 cups salsa
1/2 tsp cumin powder
1 tbsp fresh chopped parsley
1  1/2 cups shredded cheese (Monterey Jack, cheddar, mozzarella)

Béchamel sauce:
2 tbsps butter
2 tbsps flour
1/4 tsp salt
a few grinds of pepper
1 cup milk

Melt butter in saucepan and add flour, salt and pepper. Whisk in the milk and cook until thickened, about 2 minutes. Set aside.

Mix cooked turkey with fried beans, 2 tbsps salsa, cumin and parsley. Distribute evenly on tortillas and roll them up.

Spoon a few tablespoons of salsa into an 11 X 8" baking dish and sit the rolled tortillas on top.

Pour béchamel sauce between each tortilla and pour salsa on top of each and down the sides to coat .

Sprinkle shredded cheese over it all and bake at 375 F for 20 minutes covered.

Then uncover and bake an additional 10 minutes. Rest 10 minutes before cutting into squares.

If you make it ahead of time then just remove from fridge and sit it on the counter for 1 hour. Then bake as usual.
