Roasting brings out the sweetness in the beets and sweet potatoes. Some people who don't usually like them just might change their minds. (You know who you are)
1 small sweet potato
3 medium white potatoes
1 medium beet
2 tbsps olive oil
a dash or two of balsamic vinegar
Wash and peel the veggies, leave the skin on if you're using new potatoes. Cut the sweet potatoes and beets in about 1 inch pieces. Cut the white potatoes a little bigger as they will cook faster.
Toss the potatoes in a bag along with the olive oil and balsamic. Add paprika, onion powder and salt to taste.
Spread out on a lined baking sheet and bake at 400 F for 45 minutes.
Serve sprinkled with a little parsley.
I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well.
