I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Creamy Mozzarella Chicken

I got this recipe from a friend 30+ years ago.  It wasn't really a recipe, more like "my Mom uses a water glass full of this and a handful of that" but we finally made it with actual measurements that I could follow. We don't see each other as often as we'd like but whenever I make this I think of her.  I guess she was thinking of me too because she called me the day after I made this.

2 boneless skinless chicken breasts, sliced in strips
6 cloves garlic, sliced
1 tbsp olive oil
1 tbsp butter
1 cup 10% cream
1  1/2 cups mozzarella, shredded
garnish with chopped parsley, arugula or radish leaves

Peel and slice the garlic and set aside.  Heat olive oil and butter in a large skillet.  Add chicken and cook on medium high heat until browned and cooked through.  Add the garlic and lightly brown.  

Lower the heat to medium and pour the cream in.  Stir, scraping up any brown bits that might be on the pan. Cook until heated through.

Remove from heat and add the mozzarella.  

Garnish and serve. Hope you like it.
