I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Tuscan Turkey Pot Pie with Basil Cream Sauce and Cracker Streusel Topping

Not going to lie to you.  This is not a very pretty dish.  But 4 out of 4 people in the family agree.....it tastes great!

1  9-inch pie crust
3  1/2 - 4 cups cooked chopped turkey
2 tbsps. butter or marg
2 tbsps. flour
1/2 cup finely chopped onion
3 garlic cloves, minced
1/4 cup chopped sundried tomatoes
1/4 cup chopped fresh basil
1  1/2 cups chicken broth
1/2 cup 10% cream

2 cups (1  1/2 sleeves) crushed crackers
1/2 cup melted butter or marg

Heat butter in a frying pan and add onion and garlic.  Cook 1-2 minutes only until translucent.  Mix in flour then quickly whisk in the chicken broth. Add the sundried tomatoes and basil and continue stirring until the sauce thickens.  Add the cream.

Mix the cream sauce in a large bowl with the chopped turkey, then spoon into pie crust.

For the streusel topping crush the crackers (I used Premium Plus) and mix with the melted butter.  Press lightly onto top of pie.

Ready for the oven

Bake at 350F for 30 minutes.
