I started this blog so my daughters could find all of our family favourite recipes in one place. It has actually grown into more than just the family favourites but also other recipes we've tried out in our kitchen. I don't like to fill up the post with alot of chatter. Sometimes there's a little story to tell, but usually I like to get right to the point. So this is for them, but hope you find some recipes that you like as well. I'll be sharing a lot of recipes, and along the way you'll find some crafty things and maybe some helpful hints too! Welcome!

Kofka Meatballs with Spinach Dip

Kofka is often made on a skewer, but I find it easier to make it into meatballs. 

1  1/4 lbs ground beef
1/2 onion, finely chopped
4-5 cloves garlic, finely chopped
1 tbsp tomato paste
3 tbsps parsley
1 tsp cumin
1 tsp freshly ground coriander seeds
1/2 tsp cinnamon
1/2 tsp salt
ground pepper to taste
pinch of cayenne
1/3 cup fresh bread crumbs
1 egg

Mix all ingredients together and form into balls this size and put them on a parchment lined cookie sheet.
Bake 375 F for 25 minutes.

It goes well with Rice Salad Middle Eastern-style

You can serve it with your favourite tzatziki or this spinach dip recipe from Knorr.

Knorr Spinach Dip
 
MAKES 4 cups dip      

PREP TIME: 10 Minute(s)     
CHILL TIME: 2 Hour(s)


Ingredients
1 package (10 oz.) frozen chopped spinach, thawed and squeezed dry
1 container (16 oz.) sour cream
1 cup mayonnaise
1 package Knorr Vegetable recipe mix
1 can (8 oz.) water chestnuts, drained and chopped

Directions
Combine all ingredients and chill for about 2 hours.
